The promotion of sustainable practices and support of local farmers is very important to Josie. As a life long customer of the local Hamilton Farmer's Markets and a believer in small neighbourhood family businesses, she has always wanted to help support a sense of community in her own small business. As a mother, she understands the importance of quality food and building a sustainable future for following generations. After attending York University for Business Studies, Josie decided her real passion lay in food and completed Chef Training at George Brown College in Toronto. She worked in several bakeries and restaurants before returning to school to complete Baking Pastry Arts and Culinary Management at the Niagara Culinary Institute in Niagara-on-the-lake.
Creating edible art has been Nicole's passion since the creation of her first banana cream pie as a child. This grew into a love of baking that led her to become a patisserie apprentice in 2002. The art of cake decorating, as well as the pastry arts in general, became her main focus while attending George Brown and The Niagara Culinary Institute in the Pastry Arts programs. Graduating at the top of her class and praised for taking risks and creating without borders, she dreamed of opening and running her own bakery one day.
